This recipe is uncomplicated and if you’re a spice lover, you’re probably already sitting on most of these. All you need for this soup are sweet potatoes, coconut milk, onion, broth, spices and cilantro.
This soup is like bolognese, but the soup version. I wanted to have pasta and hungry bae wanted to have soup, thus this Franken dish was born. It seems strange but was actually quite satisfying and comforting.

If you are South African, you would have probably eaten a version of this soup before. It would most likely use a packet of Knorr Thick Vegetable soup mix. This recipe is an homage to that recipe but uses made from scratch ingredients.
Though it is a little time consuming to fill each shell individually, it is totally worth the effort. Unlike the other pasta bakes, this pasta doesn’t require a lot of sauce, just a drizzle of yogurt sauce does the trick!
