This is a Middle Eastern dessert I grew very fond of while residing in Dubai.
Set aside the croissants, sultanas and pistachios in a large mixing bowl.
Then in a saucepan bring the milk, fresh cream and condensed milk to a boil.
Once boiled simmer on low for approx 15 min
Then add 2 tbsp orange blossom water & 1 tbsp rose water.
Pour while hot over croissants and let it soak for about an hour or 2 if possible.
Transfer to oven proof dish or individual ramekins. Top with crushed pistachios and flaked almonds.
Bake at 160 degrees till golden brown. Do not let it get completely dry.
